Chef David Kinch, a 2009 winner of Iron Chef America, runs this contemporary California cuisine kitchen in Los Gatos. Blending influences from French and modern Spanish Catalan cuisine into genuine Californian harvest based dishes, Kinch works exclusively with Love Apple Farm, an organic local producer nearby. Inspired by France’s chef Alain Passard, the chef uses biodynamic ingredients harvested the very morning of dinner service, adding a dimension of unpredictability to the daily changing menu. Manresa has attracted some of the best chefs in the world (including Rene Redzepi, Alain Passard and Mauro Colagreco to name a few) to make the trip to try Kinch’s fare. The dining experience may start with a selection of simple amuse bouches such as a mustard gratiné of carrot, seaweed grissini with homemade lardo, and a strawberry gazpacho with almond oil. The entrees range from asparagus in bonito butter with toasted seeds to Atlantic cod with fava beans and cod tripe. As all of the ingredients are sourced fresh from the farm or garden everyday, no two visits will have the same experience. The service staff are extremely gracious and welcoming, topping off a truly unique dining experience.
